[Yilan, Taiwan] - ​蟹老闆麵食館/Crab Boss Noodle

First time to Yilan and upon arrival, I realize just how little research I had done. I know they're famous for onions and wanted to try, but I couldn't find a restaurant that was close to the bus stop (arrives at the rear entrance of the train station so you have to walk a wide loop around). We decided to just walk down Linsen Road until we got to something.

Of course, it's when you hope for random miracles that they don't occur, right? And, the hungrier you get, the more desperate you get also. We had a light snack in Taipei before hopping on the bus, so an hour later, we were hungry. We passed a bunch of fried chicken places that were all not open. On Foursquare, it looked like the places I had bookmarked all opened in the afternoon (night market snacks, restaurants). Apparently I didn't find anything that was open for lunch. Hungry and over it, we walked into 蟹老闆麵食館, or translated roughly, Crab Boss's Noodle Restaurant. It's not on Foursquare or Yelp, and surprisingly also not on Google. It's just some random restaurant in Yilan. It wasn't like no one ate there either. When we got there, only one other couple was there. Mid meal, the restaurant was full. 

They have a wide variety of items that are either rice or noodle based, and appetizers you can grab from the display. We went with the pickled cabbage, seaweed, and pig ears. I don't really remember the seaweed or pig ears really standing out, but those onions man, those onions. That sharp tang. It made every bite delicious. Eating onions at home now is not the same. And this was just a random mom and pop shop!

We also ordered some noodles. I call them booger noodles, but the consistency is more snotty. Appetizing, I'm sure. Either way, they were good. I would recommend getting the thicker noodles for easier eating. I had the 米粉, or rice vermicelli, and it was hard to mix in the soup. It was also difficult to get enough strands to eat without picking up the entire lump of noodles.
